It is day 3 of my smoothie thing. I am tired, for sure and I can’t say I am following it perfectly which would add to my sleepy eyes. Oh well, I am trying. I did buy kale to make kale chips. I have heard sooo much about them, but I want to get some nutritional yeast because I hear that makes them even super yummier.
I got some brown faux emu in and I made a couple pouches last night. I think it is super pretty. I have some new things I am working on and so many ideas in my head. I like it except when you lay awake at night thinking…. “hmm… I could make it like this or sew it like that or do that or oh crap. I have to get my receipts sorted and and and….” haha.


5 things.

2. almost finished with flags for a wedding. I hope she still wants them
3. different fruit for my green smoothies
4. a cold and rainy day – perfect

I just saw this recipe on It’s a Vegan Dog’s Life. I think my dogs would go crazy over these. Will have to try…
check out her book of recipes.

Sweet Potato Muffins
Besides being a favorite of dogs, sweet potatoes are rich in potassium, fiber and vitamins A & C.
1 ½ cups flour
1 Tbsp. ground flax
1 Tbsp. hulled hemp seeds (optional)
2 Tbsp. nutritional yeast
½ tsp. baking soda
1 cup sweet potato, cooked & mashed (yams will work, too)
1 cup water
3 Tbsp. blackstrap molasses or agave nectar
Preheat oven to 350 degrees. Spray mini muffin pans with non-stick spray.
In a large bowl, combine sweet potato, water and molasses or agave nectar. Add flour, flax, hemp seeds, nutritional yeast and baking soda, mixing well. Scoop batter into the muffin pans and bake for 30 minutes. Remove and let cool completely before serving. Store in the fridge.
Makes approximately two dozen mini muffins.
Variations
Biscuits- Reduce water by ½ cup and eliminate baking soda. Knead into a stiff dough, adding ¼ cup of flour at a time until it can be rolled out without sticking to the rolling pin (add a bit of water if it gets too dry). Roll out onto a floured surface to ¼ inch thickness. Cut with cookie cutters or knife and bake on a greased cookie sheet until crispy.
Cookies- Add ¼ cup of flour at a time until dough is firm enough to form into balls. Place dough balls on a greased cookie sheet and press flat with your hand or a fork. Bake until crispy.
Bagels- Make the same as the cookies except do not press them flat. Dip your finger in water and poke a hole in the middle of the dough ball. Flatten slightly to form a bagel shape. Bake until crispy. [click to continue…]
